Penny-Wise German Fries

So you've been to the Potato and Onion Gardening Workshop held March 8th at HOH and you've planted some of those vegetables.... Now, what can you cook with them?  How about some German Fries!!!

You don’t have to be German to enjoy these delicious German Fries.  A simple recipe of sliced potatoes and onions, pan fried to a golden brown.... the best thing about this dish is that it costs just pennies to make!!!  An added bonus:  it is warm and yummy comfort food :)   Nutritious too!  Grab some from your garden and 'potato up,' ie. start cooking.  See Recipe below.





Penny Wise German Fries Recipe

Ingredients

3       Medium to large russet potatoes (approx 1 lb),
         sliced about ¼” thick
1       Onion, sliced approx ¼” thick
2       Tbsp Canola Oil
1       Tbsp Olive Oil
½      Tsp Salt
         Pepper (to taste)


Directions:     (see below for step by step images)

1.  Preheat oven to 450 degrees.
2.  Scrub potatoes well using cool water and veggie brush.
3.  Slice potatoes into 1/4 inch slices.  Each potato will yield 10-14 slices.
4.  Slice onions into 1/4 inch slices; yields about 8-10 slices.   Remove outer skin.  (Skin can be removed before slicing if preferred.
5.  Measure and mix canola and olive oil together in a cup.
6.  Place potato and onion slices in a medium bowl and drizzle the oil mixture over the potatoes and onions.  Coat all pieces well so they don't stick to the pan.
7.  Line a large roasting pan with heavy foil and place potato, onion mixture evenly on pan (single layer).  Sprinkle salt & pepper on potatoes and onions.
8.  Roast in oven for 10 minutes on each side, or until golden brown.

Makes approximately 4 servings.

Preheat Oven. Gather Ingredients. Scrub potatoes.

Slice potatoes, 1/4 inch thickness.

Slice onions, 1/4 inch thickness

Place in bowl, and drizzle oil over.
Place in a single layer in pan; add salt, pepper


Roast in oven :)

What's so great about potatoes and onions anyway?
